Cl...Hi Michelle, Thank you so much on your comment. Claypots/crockpots are made at high temperatures and are able to transfer heat evenly and slowly to the soup. My mother taught me that the key to simmering a pot of good chinese soup is : Bring to boil over high heat first, then, turn to low heat and braise for hours. So that the proteins of food could be extracted into soup, make soup flavorful clear and thick. Modern people like us always makes a mistake by braising the soups using boiling water or add cold water halfway through the cooking process. Like that, the ingredients are not being heated evenly and the nutrients couldn't totally released from the ingredients, and result will be affected. After my mother told me about the tips, my soup indeed taste better. Hehe.. I've used similar crockpots for quite a few yrs but never had to boil the soup at the stove first.
